Mid Night Paranthas

Working at Mid Night Paranthas in Sector 21 means our schedule is a bit different from most people. When everyone else is heading home, we are just getting things ready. Sector 21 is a quiet area, and at night you can really hear every little sound, like the scrape of a chair or the sizzle of the stove. We don't have a big fancy storefront. It’s more of a practical space where we can get the cooking done without any distractions. The air gets cool at night, which is nice because the kitchen stays pretty hot once the burners are on. We spend hours rolling out dough and making sure the fillings are right. There are a few lightbulbs that flicker sometimes, and the walls have some spots from the steam, but it’s a good place to work. We don't talk a whole lot when it gets busy, we just move around each other in the small space. It’s a simple life, focused on the food and the clock. We see the same delivery drivers every night and sometimes we share a quick word before they head back out into the dark. By the time the sun starts coming up, we are tired and ready to head home ourselves. It’s just how we do things here, keeping the kitchen going while the rest of the city is mostly asleep. We keep it simple and keep it moving.
