You can find us over at P-8 A on Dr Jai Dayal Soota Marg in the New Colony area of Gurgaon. New Colony has been around for a long time, and we’ve been part of it for a good stretch too. Our space is mostly taken up by big industrial stoves, massive pots, and stacks of serving trays. When we have a big event coming up, the whole place turns into a hive of activity. There’s the sound of knives on cutting boards and the smell of large batches of food simmering. We spend a lot of time loading and unloading the trucks that park out on the street. Dr Jai Dayal Soota Marg can get pretty narrow and crowded, so moving the equipment in and out is always a bit of a challenge. Our team is mostly made up of people who have been doing this for years. We don’t really use fancy gadgets; we rely on big spoons and heavy pans. The walls are lined with shelves for all the plates and cutlery we need to keep track of. It’s a greasy, hot, and noisy job, but it’s what we do. We usually start our shift when most people are still asleep to get the prep work finished. By the time the sun is up, we’re usually ready to start packing everything into the vans. It’s a straightforward business with no frills, just a lot of hard work in a busy part of Gurgaon.
