Our business is run out of House No. 119 in Sector 14, Gurgaon. It is not what you would expect for a restaurant company. We do not have a big glass front or a neon sign. It is a more personal setup. We spend most of our time in the kitchen or planning menus for the different spots we manage. Sector 14 is a nice, established area, so we have a lot of regular people who know us. The kitchen can get very hot and loud during the lunch rush. We use a lot of fresh ingredients that we buy from the local mandi. Sometimes the stove breaks or we run out of gas, and we have to scramble to get things moving again. It is just the reality of the restaurant business. We do not use any fancy marketing talk. We just focus on making food that tastes like it should. Our staff has been with us for a long time, so we are like a small family. We have our disagreements, usually about how much salt to put in something, but we get through it. We do not have a big office with suits. Most of the time we are in our aprons. We just want to serve decent meals to the people around here. It is a lot of standing and a lot of cleaning, but it is what we know how to do best.
