Dana Chogas Kababri is tucked away at E-12 in the Gold Souk area. Most people come here looking for jewelry but they end up smelling the grill and finding us. We spend a lot of time marinating the meat and getting the coal fires started early. It’s a small kitchen but we make it work. The heat from the tandoor can be a bit much in the middle of July. We have a few tables out front where people can sit while they wait. It’s mostly a take-away kind of place though. We see all sorts of people walking through the souk every day. Some are just window shopping and others are there for a big occasion. We just keep our focus on the skewers. Sometimes we run out of the spicy mint chutney and have to whip up a new batch real quick. My brother handles the billing while I stay near the fire. It’s a family effort to keep things running smoothly. We don’t have fancy menus or decorations on the walls. It’s just about the food and getting it out to people while it’s still hot. We’ve been in this unit for a while and the other shopkeepers are like neighbors to us. There is always a bit of a mess around the bins but we try to keep our area tidy enough for the guests who stay.
