We are located inside the Trident Hotel, which is at 443 in Udyog Vihar Phase V. The restaurant is called Cilantro. It’s a large, open space with lots of windows that let in the sunlight. We serve food all day, from early morning until late at night. Many of the people who eat here are visiting for work and staying in the hotel. It’s a bit different from a small stall because we have more staff and things are more structured. But at the end of the day, we are just a team of people trying to get the food out on time. We spend a lot of hours together in the kitchen and the dining area. It feels more like a second home to many of us. We try to keep things calm, even when the lunch rush gets very busy with all the office people from Udyog Vihar. You have to be quick on your feet in this job. The view of the hotel garden is quite nice if you have a moment to look out the window. We don't use a lot of marketing talk or try to sound like a big corporation. We just focus on the daily tasks of cleaning the tables and making sure the kitchen is ready. We’ve been part of the hotel for quite a while now and we know the routine well. It’s a steady job and we take it one day at a time.
