Angrezee Dhaba

We have been running this place at the DT Mega Mall in DLF City Phase I for a while now. Most days start early when the mall is still quiet and the air conditioning is just clicking on. We spend a lot of time getting the tables ready and making sure the kitchen is set up for the afternoon rush. It gets pretty loud in here when the offices upstairs let out for lunch. The wooden furniture we have is sturdy, though some of the chairs have a few scratches from people moving them around so much. Being in a mall means we see all sorts of people, from shoppers carrying heavy bags to groups of teenagers just hanging out. We just focus on keeping the floors clean and the food coming out as fast as the cooks can manage it. Sometimes the mall music gets a bit repetitive, but you get used to it after a few weeks of working here. The space isn't huge, so things can feel a bit cramped when it is raining outside and everyone crowds into the mall to stay dry. We just try to keep things organized so no one is tripping over each other. It is a lot of work to keep a kitchen running in a place like this, but we have a rhythm down. Most of us live nearby, so the commute isn't too bad, which helps when we have to stay late for the weekend crowds.
