Down in Suncity, on the second floor of the Mega Floor building at B-5, is where Aapka Lazeez Khana operates. It’s a bit of a climb, but the kitchen stays busy from morning till night. Sec-54 is a nice area, though it gets quite congested during the evening rush. We focus mostly on getting the food out hot and making sure the flavors are what people expect. It’s a commercial kitchen setup, so it’s loud. You’ve got the sound of pans hitting burners and people shouting orders over the exhaust fans. We aren't a fancy sit-down restaurant with white tablecloths. We’re more about the actual cooking part. Our staff comes from all over, bringing their own ways of doing things, which keeps it interesting. We buy our vegetables and spices from the same people we’ve known for years. Sometimes the delivery bikes are lined up outside, waiting for the bags to be packed. We try to keep things organized, but when the lunch rush hits, it’s a bit of a scramble. We don't use a lot of fancy words to describe what we do. It’s just food. We want it to taste like home, or at least like something you’d want to eat again tomorrow. There’s no secret magic, just a lot of chopping, stirring, and tasting. It’s hard work, standing on your feet all day in a hot kitchen, but we’re used to it by now.
