India`S Rasoi

You can find us at 61 Kallol Apartments over in I.P. Extension. This isn't some big restaurant chain with a million locations. It’s just India’s Rasoi, tucked away in a residential complex. Most of the time, the air smells like spices and whatever is bubbling on the stove. It gets really hot in the kitchen, especially during the summer months in Delhi. We spend a lot of our time chopping vegetables and making sure the supplies are fresh. The apartment setup is a bit tight, but we’ve figured out how to make it work over the years. We aren't trying to win any design awards with the place. The floors are plain, and the counters are for working, not for looking pretty. Customers usually know us from the neighborhood. We have a lot of regular talk and people coming in and out. Sometimes the delivery guys are waiting in the hallway, which can get a bit cluttered. We just try to keep the food moving and the orders right. It’s a lot of manual work, and our hands are always busy. We don't have a big marketing team or anything. It’s just us in the kitchen and at the front. The I.P. Extension area is busy, and we fit right in with the noise and the people. We’ve been here long enough that the security guards know us all by name. It’s just a local kitchen doing what we know how to do best.
