Over at 2/47 in Geeta Colony, things get moving way before most people are even awake. Ambassador'S Sky Chef is all about the food for the flights, but this location is where the heart of the work happens. It’s a busy part of Delhi, and our building is right in the thick of it. The smell of cooking starts early and stays late. We aren't a high-end restaurant where people come to sit down. We’re a kitchen and a dispatch center. It’s loud, it’s hot, and there’s always someone shouting about a delivery window or a missing ingredient. We wear hairnets and aprons and spend hours on our feet. The floors are constantly being mopped because of all the movement. It’s a very practical environment. We don't have time for fancy decorations on the walls. We just have lists of what needs to go to which plane. Geeta Colony has a lot of energy, and we definitely add to it with our vans coming and going. Sometimes the traffic makes us crazy, but we manage. Everyone who works here is from around the area, so we all know each other well. It’s like a big, slightly chaotic family. We just focus on getting the crates packed and the trucks loaded so everything gets to the airport on time. It’s a lot of pressure, but we’ve been doing it long enough that it’s just second nature now.
