Maharaha Tent & Caterers

Our place is at Shop M-6 on the main road in Kalkaji, right across from the L-Block Gurudwara. Being Maharaha Tent & Caterers means our days are a mix of food smells and heavy lifting. You can usually smell what we are prepping from the sidewalk. There are big metal pots stacked in the back and bundles of colorful tent fabric in the corners. It gets quite crowded in the shop when we have a few jobs lined up at once. We spend hours chopping vegetables or checking the stove burners. Across the street, the Gurudwara is always peaceful, which is a nice contrast to how hectic it gets inside our shop. We don't have a big corporate team, just a few of us who know how to cook and how to set up a decent-looking tent. Kalkaji is a busy area, so there is always someone popping in to ask a question or check a price. We just write things down in a notebook and try to keep track of the calendar. Sometimes we run out of space and have to move things onto the pavement for a bit. It is honest work and it keeps us on our feet all day. We just want the food to taste good and the tents to stay standing up. That is really all there is to it at the end of the day. Every year we see the same regulars come by, which makes the long hours feel worth it.
