Down here on Rampara Road in Talaja, we run Five Star Dehydration. It’s a pretty straightforward setup. We take various products and dry them out, which is what the business is all about. Talaja isn't a very big place, so everyone knows where we are. The air around here often smells like whatever we are processing that day. It's a lot of manual work, moving trays and checking the machines. The weather plays a big part in what we do, even with the equipment we have. Some days are just better for drying than others. Our team is mostly local people from the nearby villages. We don't have a fancy corporate office with air conditioning everywhere; it’s more of a practical workspace. We spend a lot of time on the floor making sure the batches look right. It’s a bit noisy with the fans running all the time, but you get used to it. We keep track of everything in old ledgers and on the computer. It's a steady rhythm. When the harvest season hits, things get incredibly busy and we are here until late at night. Otherwise, it’s a regular pace. We don't try to be anything we aren't. We just do the dehydration work and try to keep things going without a lot of talking. It’s honest, hard work and that’s plenty for us to focus on every day.
