The Nilam Dal Besan Mill is over at Plot Nun -318/2 in Chitra Gidc. You can usually tell you are getting close by the smell of toasted chickpeas in the air. We spend our days pouring bags of dal into the grinding machines to make besan. It’s a very dusty job, and everything in the mill has a thin layer of yellow powder on it, including our hair and clothes. We’ve got these big stone grinders that make a constant rumbling sound that you get used to after a few minutes. I spend a lot of time checking the texture of the flour to make sure it’s not too coarse or too fine. Chitra Gidc is a busy place, so there are always trucks moving around and people loading sacks onto cycles. We aren't a high-tech factory; we are a traditional mill that does things the old-fashioned way. Sometimes a belt on one of the machines will snap, and we have to shut everything down while we get the tools out to fix it. It’s just part of the daily grind, literally. We don't have a fancy website or a marketing department. We just focus on keeping the machines running and making sure the bags are filled and stitched properly before they go out. We've been here for years, and most of the local traders know to come to us when they need a fresh batch of besan. It’s simple work, but it keeps us busy from morning until night.
