If you go down Paud Road and look for Prashant Society in Shivaji Nagar, you will find Shahi Halwa at 17-F. We have been in this neighborhood for a while. It’s a residential area mostly, so we know the families who live nearby. We start cooking early because halwa takes a lot of stirring and time on the stove. It isn't something you can hurry along. The shop is small and tucked away, but people find us. We don't have a website or anything fancy. My uncle started this and now we just keep it going. Sometimes we have a long line out the door on Sunday mornings. We just try to get through the day and keep the quality the same as it was yesterday. The space is a bit tight, especially when we have big pots going, but it works for us. We use the same recipes we’ve always used. Nothing has changed much over the years. We stay open until the evening or until we sell out of the fresh batches. It is hard work, especially in the heat, but we are used to it by now.
