We’ve been here at Whitefield Double Road 95 for a good while now. Most days start early, usually before the sun is even up, because the stoves need time to get hot and the milk takes a while to boil down properly. It gets pretty loud once the traffic picks up outside on the main road, but inside we just focus on the trays. Sometimes the floor gets a bit sticky or a batch doesn't turn out exactly right on the first try, but that is just how it goes when you’re doing this every single day. People come in mostly in the evenings after work when they’re tired and want something small to take home to their families. We don’t have any fancy seating or big decorations, just the glass counters and the smell of ghee that never really leaves our clothes. My father used to say the shop has its own rhythm, and you just have to follow it to stay sane. We keep things pretty simple here. There’s no big strategy or anything, just keeping the bins full and making sure the shutters are open by eight. If you walk past the big tree on the corner, you’ll see our sign. It’s a bit faded from the rain and sun, but it’s still there. We mostly know the regulars by their faces rather than names. It’s just us doing what we know how to do, day in and day out, right here in the neighborhood.
