Spice It Restaurant

We set up Spice It Restaurant in the Dhyan Complex on Cooper Road. If you are in the Civil Lines area of Allahabad, you probably know the Tata Showroom nearby; we are just a short walk from there. Civil Lines is always buzzing with people, so we get a lot of foot traffic. The restaurant itself is a straightforward setup. We don't have any interior designers or big corporate plans. We just put in some sturdy tables and chairs and started cooking. My uncle handles the accounts and I mostly stay near the entrance to greet people. It’s a lot of standing around and talking to customers. We try to keep the place tidy, but with so many people coming in from the dusty streets, it’s a constant battle. The menu is just things we like to eat ourselves. We don't try to be too creative or follow trends. Sometimes the spices are a bit stronger than usual, or the rice takes an extra ten minutes, but that's just how it goes in a real kitchen. We have some regular customers who have been coming since we first opened our doors in Dhyan Complex. They usually don't even look at the menu anymore. It’s a nice feeling when you know someone’s order before they say it. We just keep our heads down, do the work, and hope people keep coming back to Cooper Road for a meal.
