Bawarchi Dhaba

We’ve been here on Sarojini Naidu Marg for a while now. Most days start pretty early because there is always something to clean or a delivery to check on. Civil Lines is a busy part of Allahabad, so you see all sorts of people walking by. Our dhaba isn't very fancy, just some tables and chairs and the smell of the kitchen. Sometimes the fans make a bit of noise, but nobody seems to mind much. We mostly just focus on getting the food out on time. The staff here has been around for a long time, so we all know how the stove works and where everything is kept. It gets really crowded during the lunch hour. You can hear the traffic from the street while you eat. We don't really do big advertisements or anything like that. People just know where we are. It’s a simple setup. Some days are harder than others when it’s hot outside, but we just keep going. We have a routine that works for us. The kitchen stays busy until late at night. There’s always a pile of dishes to do, and the floor needs sweeping every few hours. It’s just how it is running a place like this in the middle of the city. We don't try to be anything we aren't. It is just a spot to sit down and have a meal when you are in this part of town. We are usually here from morning until the last customer leaves.
