Toran Dining Hall is over on Ashram Road in Ahmedabad, specifically at the Dudawat Hotel. We are right opposite Sales India, which is a big landmark that everyone knows. Ashram Road is one of those places that never seems to go quiet, even late at night. Our dining hall is set up to handle a lot of people at once. We do a lot of traditional meals where things are served quickly because people here are usually on their lunch breaks from the nearby offices. The kitchen is always a whirlwind of steam and noise. We have big metal plates that need constant washing, and the staff is always running back and forth between the kitchen and the tables. It gets incredibly hot in Ahmedabad, so we try to keep the fans going at full speed all day long. Sometimes the floor gets a bit slippery from all the cleaning, so we have to be careful. We don't have fancy decorations or soft lighting. It is just a bright, loud place where you come to eat and then move on with your day. We start our prep work early in the morning, chopping piles of onions and soaking lentils. By the time the doors open at noon, we are already tired, but we keep going until the last person leaves. It’s just hard, honest work every single day.
