Our little place, Nishat Restaurant, is located right in Khas Bazar, Bhadra. It's an old part of the city, 380001, and you can feel that history when you walk around the streets here. We've been at this spot for quite some time now. It isn't a large space, and sometimes it gets a bit cramped when the lunch rush hits, but we make do. People coming through Bhadra for work or shopping often stop in. We don't have a big staff, just a few of us doing the cooking and the serving. We try to keep things clean and the food hot. That's about it. There are no fancy signs or neon lights outside. Just the name on the door and the smell of whatever we are cooking that day. Khas Bazar is always noisy, with people shouting and horns honking, but inside it's a bit more relaxed. We spend a lot of time prepping vegetables and making sure the grains are sorted. It's repetitive work, but it's what we know. We don't spend money on marketing or anything like that. We just rely on people walking by. Some days are slow, and we sit outside on the steps for a bit, and other days we don't have a second to breathe. That is just how the restaurant business goes in an old market area like this one. The old building has some cracks in the walls, but it's sturdy. We keep the kitchen simple because that's what we know how to manage. There is no manager here.
