We've been here at Lal Darwaja in Ahmedabad for quite a while now. If you know the area, we are right opposite Alif Masjid in Khas Bazaar. It gets pretty busy around here, especially with the market nearby. I'm one of the folks who runs Nishant Restaurant, and we mostly just focus on getting the food out on time for the people working around the bazaar. We open up early to start the prep work. The kitchen gets hot, but that is just how it is. We see a lot of the same faces every day, which is nice because you get to know how people like their tea or their meal. Ahmedabad is a fast city, but in this corner of 380001, things feel a bit more familiar. We don't have fancy decorations or anything like that. It is just a simple place with tables and chairs where you can sit down for a bit. Sometimes the traffic outside is loud, but inside we are just focused on the cooking. We handle everything ourselves, from buying the vegetables to cleaning up at the end of the night. It's a lot of work, but it keeps us busy. The floor is a bit worn from all the feet walking over it, but we keep it swept. We don't have air conditioning, just some fans that hum all day long. Sometimes they make a bit of noise, but nobody seems to mind much when they are eating. We get our spices from the same vendor every week.
