Our little spot is called Zayka and we are tucked away over here at Patel Nagar West 35. It is a busy street and there is always something going on right outside the door. Inside, it’s mostly just us working in the back and a few tables for people to sit at. The kitchen gets really warm in the afternoons, so we keep the back door cracked open even if it lets a bit of the city noise in. We don't have a big staff or anything, just a couple of us doing the cooking and cleaning. We spend a lot of time chopping onions and washing dishes. The walls could probably use a new coat of paint, but we haven't found the time to get around to it yet. People come in from the offices nearby or just folks living in the apartments around Patel Nagar. It’s not a fancy place where you need to dress up. You just walk in, sit down, and eat. We try to keep the menu simple because it’s easier to handle that way. Sometimes we run out of things if the market was short on fresh stuff that morning. It’s just a normal, everyday business. We open up the shutters, do the work, and then head home when the lights on the street start flickering. We usually spend a few minutes at the end of the day just making sure the stove is off and the floor is mostly swept before we lock up for the night.
