We have been running this small kitchen in Paschim Vihar for a long time now. It’s right there on Choudhary Balbir Singh Marg in the Jwala Heri area, specifically at number 19. It’s a busy spot, mostly because of the popular market nearby. We don’t have much space for people to sit down and relax, so it’s usually quite crowded with folks waiting for their takeaway packets. We cook traditional vegetarian food, the kind of stuff you’d find in any home around here. My brother and I handle most of the daily work, from getting the vegetables in the morning to cleaning up the counters at night. It’s hard work and the kitchen gets incredibly hot during the summer months when the stoves are all going. We don't spend money on fancy advertisements or shiny signs. Most people who come here live just a few blocks away and have been eating our dal and rotis for years. We try to keep the spices balanced so it doesn't get too heavy for a daily meal. Sometimes we run out of certain dishes before the dinner rush is even over, which can be frustrating for some regulars, but we only make a set amount every day to keep things fresh. It’s just how we operate. We’re not trying to be a big chain or anything. We just want to make sure the food tastes okay and that people get their lunch on time.
