Twist Potato

You’ll find our stall in the food court at Tagore Garden. It’s a pretty loud and bright place with music and a lot of people constantly moving around. Our little spot is where we spend the bulk of our time, surrounded by the smell of hot oil and spices. Working in a food court is a bit different from having a regular shop on the street. You’re part of a big crowd, and everything has to move quickly. We spend a lot of time prepping the potatoes and making sure the fryers are ready to go. It involves a lot of standing around on your feet all day, which can get tiring after a while. We see hundreds of different faces every single day. Some people are just passing through while they shop, and others are regulars who come by every weekend with their families. The space we have is quite small, so we have to be very organized with how we move and where we put things. We don't have much storage, so we’re always getting fresh supplies brought in. Sometimes the mall gets really packed, especially on Sundays, and the line gets long. We just keep our heads down and keep working through the orders. We aren't trying to be a fancy restaurant; we just want to serve something that people enjoy. It’s a fast-paced environment, but we’ve gotten used to the noise and the rush here at Tagore Garden.
