The Pindi Pandara Road Wale

We are over here in Janakpuri, right opposite that Allahabad Bank and pretty close to the KFC. It's a busy part of Delhi, so things can get a bit loud outside with the traffic. People know us for the food we brought over from the Pandara Road style. It is mostly just a bunch of us working in the kitchen making sure the gravies are right every day. It’s not fancy or anything. We have some tables and chairs, and the lights are just normal lights. Sometimes the delivery guys are crowded at the front, but we try to keep things moving. The menu has the usual stuff you'd expect. We spend a lot of time cleaning the floors and making sure the tandoor is hot enough before the lunch rush starts. It gets really packed on Sunday evenings when families come out. You might have to wait a few minutes if it's full. We don't really do big advertisements or anything. Most folks just walk in because they live nearby or they're finishing up at the bank across the street. It’s just a regular place to eat. We deal with the usual Delhi heat and the traffic noises from the C1 block. Nothing too special, just a local spot where we try to get the orders out on time. The fridge sometimes makes a humming sound, and we have to remind the staff to keep the door shut. We keep a stack of napkins on every table because things get messy. Usually, the morning starts with getting the onions chopped. We are at c1/122.
