The Great Indian Food Truck

Running the truck in Hari Nagar is a lot of work but we like being out on Jail Road. We are parked near the Santoshi Mata Mandir, so there is always a good mix of people walking by. The day starts with a lot of chopping and prep work in a very small kitchen space. It gets incredibly hot inside the truck during the summer months, even with the fans going full blast. We spend a lot of time cleaning the griddles and making sure everything is scrubbed down. It’s not a glamorous job. You’re on your feet for ten or twelve hours at a stretch. On festival days near the temple, it gets really loud and we barely have a second to breathe. We don't have a fancy menu with big words, just the stuff people like to eat when they’re out on the street. Sometimes the generator acts up and we have to fiddle with it for an hour to get the lights back on. That’s just part of the life of a food truck. We have our regulars who come by every week and we know exactly what they want without them asking. It’s a nice feeling to be a part of the local street scene. When we close up late at night, the whole road is quiet and we finally get to sit down for a bit and eat something ourselves.
