It’s a small shop, but we make it work. The location is pretty easy to find once you get into the B-1 block. We don't have much space for people to sit, so it's mostly a grab-and-go kind of place. The name is a bit long for a shawarma spot, but that’s the legal side of it. We just call it the shop. Working on the ground floor is good because we can see everyone passing by. It gets quite hot near the grills, especially during the Delhi summers. We do our best to keep the place tidy, but it's a busy kitchen. There isn't any fancy marketing here. We just put the meat on the spit and start the day. The neighbors in West Patel Nagar are nice and we’ve become a bit of a fixture on this street. Sometimes the supply of bread is late or the power goes out, but we just deal with it as it comes. It’s not a glamorous job, but we like the routine. We aren't part of some big chain, just a local Tnership trying to serve the area from our little corner in Shop No. 4. West Patel Nagar is where we belong, and we’ve built some good relationships with the locals. It’s just us, the grill, and the customers every single day. We don’t need anything more than that to be satisfied with our work here.
