Punjabi Paratha

Our little spot is right in Vikaspuri, specifically over at Site 1. If you know where the Jetking office is, we are just right across from there. It gets really crowded during the lunch hour when the office workers come out looking for something to eat. We spend most of our mornings just getting the dough ready and chopping up vegetables for the fillings. The tandoor stays hot all day, which makes it pretty warm inside the shop, especially during the summer months. We don't have any fancy waiters or anything like that. It's just us in the kitchen and a few tables for people to sit down. We use a lot of butter and spices, just the way we like it ourselves. Sometimes the delivery guys are buzzing around on their scooters, and it gets a bit chaotic with the noise and the orders. We’ve been at this for a while now, so we know what people like. Usually, by the time evening rolls around, we are quite tired, but there is always cleaning to do. We make sure the floors are swept and the tawa is ready for the next day. It’s a loud place with people talking and the sound of cooking, but that’s just how it is. We aren't trying to be a five-star hotel, we just want to serve a decent meal to whoever walks through the door. It’s a simple life.
