Milano Sauce Factory

We are tucked away in Nangloi, specifically in Saini Maholla at 126/70. This isn't a retail shop where people come to browse. It’s a factory, so it’s usually loud and smells like spices and tomatoes. We spend our hours making different kinds of sauces that end up in kitchens all over. The floor is often wet from cleaning, and there is always a crate of bottles being moved from one corner to another. It’s hard work, and the heat from the cooking vats can get pretty intense during the summer months. We have a small group of workers who have been with us for a long time. We all know the routine by heart now. We start early when the air is still a bit cool and try to get the main batches done before the afternoon sun hits the roof. There’s no fancy office here, just a small desk in the corner where we keep the logs and take calls from suppliers. Dealing with fresh ingredients means we have to stay on our toes. Sometimes the delivery trucks get stuck in the narrow lanes of Saini Maholla, which can be a real headache. But we manage to get the crates out one way or another. It’s a messy, busy, and honest way to make a living. We don't spend much time worrying about how the place looks as long as the sauce is made right and the bottles are filled. That is what we do here.
