We’ve been here in Mayur Vihar Phase I for quite a while now. Our shop is near Patpar Ganj, and if you know this area, you know how busy the streets get around 110. Every morning, we start early, usually before the sun is even fully up. We have to get the fryers going for the morning kachoris and samosas. It gets pretty hot in the kitchen, especially during the summer months when the air just stands still. We don’t have any of those big fancy machines you see in the malls. Everything is done by hand here. My brother and I handle most of the cooking while a younger lad helps out at the counter. We make sweets like laddoos and barfi too. Most people who come in are just neighbors stopping by on their way home from work. They usually want a little something to take back for tea. The shop isn't much to look at, just some glass cases and a few stools, but we keep it as tidy as we can. Sometimes we run out of the popular snacks by five in the evening, and we have to tell people to come back tomorrow. It’s a bit frustrating for them, I know, but we only make what we can manage in a day. The traffic outside is always honking, and the dust from the road comes in, so we spend a lot of time wiping down the counters.
