Chawlas 2 Pure Veg Restaurant

We have been here in Freeganj for a while now, right above where the ING Vysya Bank is on Kamla Nehru Marg. It gets pretty busy around Aditya Plaza, especially in the evenings when everyone is out near Durga Plaza. Our place, Chawlas 2 Pure Veg Restaurant, is just a regular spot where we focus on vegetarian food. There isn't anything fancy about how we do things here. Most mornings start with the staff getting the kitchen ready and checking the vegetables we got from the market early that day. Ujjain is a city that loves its food, and we see all sorts of people walking up the stairs to find us. Sometimes the ceiling fans are a bit loud and the kitchen gets really hot, but that is just how it is in this business. We spend most of our day making sure the tables are clean and the food is ready for whoever walks in. It is a simple setup with no frills. You can hear the traffic from the road outside while you sit and eat. We don't try to be like those big chain places you see in the mall. It’s just us and the cooks working every day. We know the neighbors around here well. Some people come in quickly for a bite before heading back to work, while others stay a bit longer. It’s a lot of work keeping everything moving, but we’ve been at it for some time. We just keep the lights on and the food cooking for the local crowd.
