We are located right at Shastri Circle 1, which is a pretty central spot. Because of that, we get a lot of people coming in during their lunch breaks from the nearby offices. The kitchen starts moving early in the morning, around 8:00, with the sound of knives hitting cutting boards. We go through a lot of vegetables every single day. It is a lot of peeling, chopping, and boiling. The heat from the big stoves makes the whole place feel like an oven by mid-afternoon, even with the windows open. We don't have a big menu, just the usual stuff that people expect to eat for a daily meal. I spend a lot of my time making sure the floors are not slippery and that the plates are actually clean. Sometimes we run out of something popular and have to tell people we're sorry, which is never fun. It is a family-run kind of thing, so you might see the same few people every time you come in. We don't use any fancy equipment, just old pots and pans that have seen better days. The furniture is basic wood, and sometimes the chairs creak when people sit down. We just focus on getting the food out on time so people can get back to their jobs. It is hard work and our backs usually ache by the time we finish cleaning up the last of the grease at night.
