You can find us at number 4 in the Bhatt Ji Ki Bari area of Udaipur. We’re right opposite Bansi Paan, which is a good landmark for people trying to find Platterz Global Cuisine Restro. The restaurant is in a busy part of the city, and we’ve got a lot of different things on the menu. We spend a lot of time in the back prepping ingredients because we try to cover a lot of different styles of cooking. It’s a lot of work keeping the spices separate and the pans clean. The dining room has a lot of windows, so we get a good view of the street, but it also means we spend a lot of time cleaning the glass. Udaipur gets a lot of visitors, so we see people from all over, but we also have our regulars from around the HO area. The kitchen can get a bit disorganized when it's busy, but we managed to get the plates out eventually. We don't have a corporate office or a marketing team; it’s just us and the cooks making sure the food tastes okay. Sometimes the delivery bikes block the entrance, and we have to go out and ask them to move. It’s just the daily grind of running a kitchen in a busy town. We try to keep the atmosphere relaxed so people can just sit and eat without feeling rushed by the staff.
