Chicken Bistro

Our place is called Chicken Bistro and you can find us at Shop Number 1 on the road that goes toward the airport and Debari in Udaipur. We are right opposite Pacific College, so we get a lot of students coming in throughout the day. The energy around here is always high because of the college crowd. It’s a basic shop, nothing too fancy or polished. We spend most of our time in the back getting things ready before the doors open. Rajasthan can get incredibly hot, so the kitchen is often a tough place to be, but we’re used to it. We don't have a big team, just a few of us who handle everything from the cooking to the cleaning. We get our supplies from the local markets every morning to make sure we have what we need. The road outside is always busy with cars and trucks heading out of the city, so it can get a bit dusty. We try to keep the seating area as tidy as possible for the customers. We don’t have a mission statement or any of that corporate stuff. We just want to serve chicken and keep our regulars happy. It’s a lot of hard work and long hours, but seeing the same faces come back every week makes it worth it. We are just a local business trying to do things right in our own small way.
