Tandoor Evening

Setting up shop here in Hiranandani Estate at Arcedia has been an interesting journey. We are right by Shreema school, so we see the kids and parents passing by every afternoon. When evening rolls around, that is when things really pick up for us. The name Tandoor Evening kind of says it all because that’s when the tandoor really gets going and the smoke starts drifting out. It’s a decent sized place in Thane West, though it feels smaller when it's full. We have a few staff members who have been with us since we opened. They know how to handle the rush when everyone wants their dinner at the same time. The area on Ghodbunder road is always moving, so we try to keep up with that pace. It isn't a quiet place, but it feels like home to us. We spend a lot of time checking the ingredients and making sure the kitchen is tidy. Nothing is too fancy here. We use regular plates and the furniture is just standard stuff that works. Sometimes we run out of things if the day is busier than we thought it would be. That is just how a small business works. We don't spend money on big ads, we just open the doors and let the smell of the food do the talking. It's a plain way of doing things but it works for us in this part of Mumbai. We hope to stay here for many more years as the neighborhood grows and changes.
