We are based over at Shop No 1&2 in the Vikrant Society, which is part of Building No 40 in the Kharegaon-kalwa area of Thane. The shop is located near the swimming tank and Manisha Nagar, so there are usually plenty of people walking around, especially in the evenings. We started this kitchen because we wanted a place in the local community. It is a pretty straightforward setup with some basic equipment and a couple of us working through the day. The area around here is mostly residential, so we see a lot of the same faces every week. We open up the shutters early to get everything cleaned and prepped. Sometimes it gets a bit noisy with the kids coming back from the swimming tank nearby. The address is 400605 for anyone wondering. We don't really do anything flashy here, just focus on the cooking and making sure the kitchen stays organized. The society is quiet for the most part, except for when the local traffic picks up. We have been at these shops for a while now and it feels like home. There is a lot of routine involved in what we do, from checking the supplies to cleaning the counters at night. It is hard work but we are used to the pace of Kalwa. We just provide what the neighborhood needs without any fuss or complicated stuff. It is just a kitchen where we do our daily work.
