Paradise Kitchen Hyderabadi Biryani

Our kitchen is tucked into Shop 1-2 of the Shiv Villa Society at Sai Chowk. We are right there in the Khadakpada area of Kalyan City, not too far from the Cinemax. It is a small setup, mostly focused on getting the biryani out to people who are hungry. We spend a lot of our morning prep time cutting onions and getting the spices ready so the smell starts drifting out onto the street by noon. Since we are near the cinema, we get a lot of people stopping by to grab a bite before their movie starts or right after it ends. The shop isn't very big, so it gets a bit crowded when there are more than five people waiting for their parcels. We have a couple of tables if you want to sit down, but most folks just take their food home to their families. The floors are tiled and we keep the counters wiped down, though it gets messy again pretty quickly during the Sunday rush. We use the recipes we’ve always used, and we don't change things up much because people seem to like the taste. The heat from the big pots makes the shop quite warm, especially in the afternoons, but that is part of the job. It is just a local kitchen doing what we know how to do for the people in the society and the neighborhood around Khadakpada.
