Hotchips Kandivali East

Frying chips is a lot more complicated than it looks, mostly because of how hot the oil gets in our small shop. Hotchips Kandivali East is situated right on the Kandivali East Sion Prombay Road Ghadi Mankund 12, which means we have a lot of dust coming in from the main road. We are constantly wiping down the glass jars and the scales to keep things clean. My day starts with peeling and slicing bags of potatoes and bananas until my hands feel a bit numb. The oil has to be at just the right temperature or the chips come out soggy, which is something we try to avoid. We don't have a big fancy sign, just the bags of chips hanging out front. People stop their bikes right on the edge of the road to grab a quick packet on their way home. The salt and spice mix gets everywhere, and by the end of the day, there is a thin layer of it on almost every surface. It gets really humid inside when we have three fryers going at once. We don’t really have much space for people to sit, so it’s mostly just a grab-and-go kind of place. Sometimes the power goes out and we have to scramble to finish the batch before the oil cools down too much. It is a simple life, just making snacks and talking to the commuters who pass by our little corner of the road every day.
