If you go down to Sangam Vihar in New Delhi-62, you will find us working away at The Noodle House. We are part of the Oriental Cuisines group, but this unit is where we spend our days and nights. It gets pretty hot in the kitchen, especially during the summer months, but we just get on with it. We spend a lot of time prepping vegetables and getting the sauces ready before the rush starts. It is not a quiet place because there is always something sizzling on the stove or someone shouting an order. Sangam Vihar is a crowded place, so there is always a lot of energy and noise around the shop. We started this because we liked the food and wanted to make it for people in the area. We do not have a fancy website or a marketing team. Most people just walk in because they smell the food cooking or they have eaten here before and liked it. The floors get a bit slippery sometimes when we are busy, and the storage room is a bit small for all our supplies, but we make it work. We have a few tables for people to sit, but a lot of what we do is just getting things ready for people to take home. It is a simple life, honestly. We wake up, get the supplies, start the burners, and see who comes by. It is just us doing what we know.
