Sushi Cuisine

Sushi Cuisine is located at Defence Colony 50. We are in a nice part of the neighborhood, and it’s usually a bit more relaxed than the main market area. Running a place like this involves a lot of prep work before we even open the doors. We spend hours slicing fish and getting the rice just the right temperature. It’s a bit of a delicate process. The kitchen is small, so we have to stay out of each other's way while we work. We don't use a lot of heavy spices, so the smell in here is quite clean, mostly just the vinegar for the rice. Our space isn't very large, with just a few tables and a counter where you can see us working. We get a lot of delivery orders from people living around Def Col. It’s funny how many people like sushi these days compared to when we first started out. We try to keep things simple and focus on the knife work. Some days the fish delivery is late and we have to wait around, which can be frustrating. But once the orders start coming in, we just put our heads down and work. The lighting is soft, and it’s a good place for a quiet dinner. We aren't trying to be the fanciest spot in town, just a place where you can get a decent roll of sushi. We just keep the ingredients fresh and do our best with the orders.
