Subway

Our Subway is at D 67, First Floor, in Freedom Fighter Enclave, right on Ignou Road. Being so close to Saket and the university means we see a lot of different people every day. It’s a busy little spot, and we spend most of our time behind the counter or in the back prep area. Every morning starts with baking the bread, which makes the whole place smell great, but it’s also a lot of work to get the timing right. We have to chop a lot of vegetables and make sure everything is fresh before the first customers arrive. The space is a bit small, and when the lunch rush hits, it can get really cramped with students waiting for their food. We don’t have a big corporate team here; it’s just us and a few regular staff members who know the menu by heart. Sometimes the fridge acts up or we run out of a certain type of bread, and we just have to deal with it and keep going. We don't use any of those pre-written sales pitches. We just try to get the orders right and keep the place as clean as possible. The stairs up to the first floor can be a bit steep, but people don't seem to mind. It’s just a regular part of the neighborhood where you can get a quick meal. We’re here from early morning until late at night, just making sure the shop stays running properly.
