We operate out of Krishna Market in Lajpat Nagar II, specifically at G-63. This isn't really a place where you come to sit and eat dinner. It’s more of a busy workspace where we handle the cooking for big events and parties. My brother and I are usually back there with the big industrial burners. It gets incredibly hot, especially when we’re making large batches of gravy or frying snacks for a hundred people. The market outside is always a mess of people and rickshaws, so getting our supplies delivered can be a real headache sometimes. We have these massive steel pots that take two people to lift when they’re full. Our office is just a small desk in the corner piled high with notebooks where we track all the orders. Sometimes we lose a pen or forget where we put a receipt, but we always manage to get the food where it needs to go on time. The walls have some soot on them from the years of cooking, and the floor is always a bit stained from spices, but that’s just a sign of a kitchen that’s always working. We don't have a big sign outside, just a small one that's a bit faded from the sun. People in Lajpat Nagar know us from word of mouth mostly. We just keep our heads down and focus on the cooking because that’s what we know how to do.
