We are located in Kalkaji Krishna Market at number 41276. It is a busy market, so there is always something going on outside our door. We focus on south Indian food like dosas and idlis. The batter has to be fermented just right, so we start that process the day before. If it is too cold at night, it doesn't rise properly, which is always a worry in the winter. We have a big flat griddle where we make the dosas. It takes a bit of skill to spread the batter thin and even. I learned it from my father back home. We have been in Kalkaji for quite a while now. The market is full of all sorts of shops, but people usually find their way to us when they want a quick meal. We keep the sambar hot all day in a big pot. Sometimes the coconut chutney runs out and we have to grind more in the middle of the rush. It can get pretty stressful when the line gets long and people are hungry. We aren't a big fancy place, just a simple stall with some standing space. We use stainless steel plates that we wash ourselves. It is a lot of scrubbing, but it is better than using plastic. We just show up every day, fire up the stove, and start cooking for whoever walks in from the market.
