Punjabi Delights

Our place is located on Sahi Hospital Road, right at 370/371-3 in Jangpura. It is a busy stretch of road because of the hospital, so there are always people walking by at odd hours. Punjabi Delights is basically a small kitchen and some tables where we serve common meals. The walls are a bit plain and the chairs are just the standard plastic kind you see everywhere. We spend most of the morning chopping onions and getting the lentils ready. It gets very hot in the back when the stoves are all going at once. We don't really have a fancy menu, just the things people expect to eat like dal, roti, and some chicken dishes. Most of our customers are folks visiting the hospital or people who work in the small offices nearby. They want something fast and filling so they can get back to what they were doing. The floor gets a bit greasy by the afternoon, so we have to mop it twice a day. I usually handle the cash box while the boys in the back do the cooking. It’s a loud place because of the traffic outside and the exhaust fan humming. We don’t do anything special for decoration. It’s just a place to sit down and eat for twenty minutes. Sometimes we run out of certain things by eight in the evening, but that’s just how it goes. We try to keep things moving and make sure the tea is always hot.
