I am usually here at Greater Kailash 29, standing near the big metal counters. This part of GK is always moving and there is never a quiet moment. We start early in the afternoon getting the potatoes ready and mixing the spices. The smell of the chutneys is very strong and it stays in the air around the corner. We do not have any tables or chairs, so everyone just stands around on the pavement to eat. It gets very crowded in the evenings when people come out for a walk. I have to move fast to keep up with the orders and my hands are always wet from the tamarind water. The plates we use are just simple disposable ones and they pile up in the bin quickly. Sometimes the rain starts suddenly and everyone has to huddle under the small awning. It is a loud place with people shouting their orders and cars driving past. We have been at this spot for quite a while and we know most of the people who live nearby. It is a basic setup, just the stove and the ingredients. We do not have a menu on the wall, people just know what we have. It is hard work being on your feet all day in the heat, but we just keep at it until the food is gone for the night.
