Gulfam Kashmiri Wazwan

You will find us in the middle of Nizamuddin Basti at Hazrat Nizamuddin West 3. This area is very old and the lanes are quite narrow, so it always feels a bit crowded. Gulfam Kashmiri Wazwan is a place that stays busy because of the location. We do things the old way here, using big heavy pots for the meat. The air inside always smells like spices and wood smoke. It’s not a quiet place at all. You can hear the noise from the street and the people walking to the shrine nearby. We serve traditional Kashmiri dishes that take a long time to cook. Most of the work happens in the early hours when we start the fires. The seating is very basic and the lighting is a bit dim, but that’s just how the building is. We have been here a long time and the walls show it. It’s a practical setup for feeding people who want a heavy meal. Sometimes we have tourists coming in, but mostly it is local people or devotees. The staff is just a few of us who have worked together for years. We don't have a website or anything like that. People just know we are here by the smell of the food or by asking around the Basti. It gets very hot in the summer, but the fans keep the air moving a little. We just focus on getting the meat tender and making sure there is enough for the night crowd.
