Bee Gees Test Kitchens

We set up our kitchen over at M-88 in Greater Kailash 2. It isn't a restaurant where you sit down and order from a menu, though people sometimes get confused about that when they walk past. It’s more of a place where we try out different recipes and see how ingredients behave under heat. Some days it smells like fresh bread, and other days it might be something spicy that makes everyone sneeze. We have a lot of ovens and stovetops crammed into the space. The idea was always to have a spot where we could just experiment without the pressure of a dinner rush. We spend a lot of time writing down measurements and then changing them slightly the next day. The neighborhood is quiet enough, which helps us focus on what we're doing. A few of us have been cooking professionally for years, so we decided to pool our knowledge here. It’s a bit messy sometimes, with flour on the floor and stacks of bowls in the sink, but that’s just how a working kitchen looks. We like being in GK-2 because it’s easy for our suppliers to find us. We don't do much advertising; people mostly know us from the industry or they’ve seen us hauling crates of vegetables inside. It’s a simple setup but it works for what we need to get done.
