First Floor Kitchen

We are based over in Sector 10 at B-87. Like the name says, we are up on the first floor. It is a pretty straightforward setup in a residential and commercial mix of an area. There are a lot of stairs to climb every day, which keeps us busy. The kitchen stays quite warm once the stoves are going, so we usually have the windows open to catch a bit of a breeze from the street. Being in Sector 10 is nice because it is a bit quieter than the main markets, but we still see plenty of people moving around. We don't have a big sign or anything flashy outside. Most people who come by already know where we are or they’ve seen us around the neighborhood. We spend a lot of our time just prepping ingredients and making sure everything is clean. It’s a simple operation, really. Just a few of us working together in the space we have. Sometimes the deliveries arrive late and it gets a bit stressful, but we just deal with it as it comes. The walls are a bit plain and the floor has some scratches from moving the heavy equipment around, but it is a working kitchen so that is expected. We just show up, do the cooking, and go home when the work is finished. It’s just a regular place where we do our thing every day. We don't have a lot of space for people to hang around, so it is mostly about getting the food ready and out the door.
