This specific branch is tucked away at D-2/42 in Sangam Vihar, New Delhi. If you know the area, you know how narrow the lanes can get and how much energy there is around here. Our kitchen is usually quite hot because the ovens are running almost all the time. We have several people working in the back, stretching dough and putting on the toppings as the orders come in through the little screen. It is not like the big quiet restaurants you see in movies. It is loud and fast. The delivery drivers are always coming in and out, grabbing their bags and checking their bikes. We spend a lot of time cleaning the flour off the counters and making sure the boxes are folded and ready to go. The floor can get a bit slippery if we aren't careful, so we are always mopping. Sometimes when it is really busy, we all have to jump in to help with the phones or the cleaning. We don't have a lot of space for sitting, so most people just pick up their food and head home.
