You can find Culinaire over at S 163 in Greater Kailash Part II. It’s a nice spot in New Delhi, and we’ve been here long enough that we know most of the people on our block. We deal with food and all the stuff that goes with it. It’s a lot of work behind the scenes that people don’t always see. The kitchen area is where most of the action happens, and it’s usually pretty loud with all the cooking going on. We don't have a flashy storefront or anything like that. We just focus on making sure the food is right. Some days are really long, especially when we have big orders to get through. We aren't trying to be some high-end corporate kitchen; we’re just people who like what we do. The neighborhood is great because there’s always something happening in GK II. We’ve grown a bit over the years, but we still feel like a local operation. Sometimes we run out of ingredients and have to dash to the local market, which is just how it goes. It’s not always perfect, but we put in the effort. We don't have a big marketing team or anything. We just rely on doing things the way they should be done. It’s a practical way to run a business. We stay busy, we keep the floors clean, and we make sure the food goes out on time. It is hard work but we enjoy being part of the food scene here.
