Our place is at C-107 in Lajpat Nagar-I, New Delhi. It’s a lively neighborhood and there is always something happening outside the door. Being in the food business means we are here early, usually before the sun is even fully up, getting things ready. The kitchen is the heart of what we do. It’s small and can get pretty cramped when everyone is working at once. There’s always the smell of spices or onions frying in the air. We don't have a fancy dining room with velvet chairs. It’s more about the food itself and getting it out to the people. Lajpat Nagar is famous for shopping, so we get a lot of people just passing through who are hungry and looking for a bite. We have our regulars too, people who live in the blocks nearby and come in every few days. The floors are stone and we have to mop them constantly because of all the foot traffic. We don't have a big marketing team or anything like that. We just focus on the pots and pans. Sometimes we run out of things and have to send someone to the local market to grab more supplies. It’s a bit chaotic but we’ve gotten used to the rhythm of it over the years. We take our breaks when we can, usually sitting on the crates out back.
