Out here in Badarpur, things move at their own pace. We have our fast food place set up right where the crowds pass through. It is a simple setup, nothing like those big chains you see in the malls. We have a few burners, some large pans, and a counter where people stand. The main thing is the heat from the stove, which stays hot all day long. We start by chopping vegetables and getting the sauces ready. Badarpur is a busy area with a lot of people traveling back and forth. We get a lot of workers who are looking for something quick to eat before they catch a bus or head home. The smell of frying food usually fills the air around our spot. It can get pretty hectic in the evenings. We are constantly moving, flipping things on the tawa and packing orders in paper. We don't have much in the way of seating, so most people just eat while standing or take their food with them. The lights from the street and the other stalls keep the place bright at night. We've been doing this for a while and we know what people like. It's not a complicated menu, just the stuff that fills you up. We keep the counter clean as much as we can between orders. When the last customer leaves, we scrub everything down and get ready to do it all again tomorrow morning. We don't change much.
